Cucumber is very low in potassium, phosphorus, and sodium — one of the safest vegetables for kidney patients at every stage, including dialysis. Its high water content must count toward the dialysis fluid budget.
Cucumber carries minimal potassium (~147 mg/100g), phosphorus, and sodium — a renal-diet staple for volume and crunch without mineral load.
The one caveat is fluid: cucumber is ~95% water, so on dialysis with a fluid allowance, large portions count toward the daily liquid budget.
Bottom line: eat cucumber freely for minerals; just count it as fluid on dialysis.
